world of pancakes

hey.  so i've been making pancakes.  i usually use the instant, just add water, powder in a box type..  they're good, plus i always put lots of fruit on them.  sometimes i mix things into them too..   often i do..  cook fruit right inside them, or sometimes peanut butter or nutella.  it's kidna strange because when i was younger i didn't like them and now i do.

anyway..  i was looking at something and came across a site about different pancakes from around the world.  this inspired me try different pancakes!

pancake #1. german pancakes.

they're baked in a pan in the oven but i found a recipe for mini ones made in muffin tins so i opted for that option.  i have some jumbo muffin tins that i haven't used so i gave that a go.  the recipe i used is here.  i think i didnt do the orange zest, and i may have used almond milk.  i think so, but awhile ago we had a liter of milk and i might have used that?

they puffed up and then kinda deflated creating a little pocket that i filled with yogurt, berries and whipped cream.  yum!

pancake #2 was a Pannukakku Finnish Pancake!

also a baked pancake, but made in a baking dish, the recipe i used is here.  i see it calls for maple syrup, i definately do not have that but i think i used some dandelion syrup that i had in the back of the fridge.  also no lemon zest and i probably used almond milk. i had some fresh bluberries so yum.

the center was kinda chewy, but i liked it.  also i had lots of left overs and it was good the next day cold.

pancake #3 - french crepes

i thought that making crepes would be difficult, but they weren't at all. when i first tried them i was thinking that i like a more substantial sorta pancake instead of something so thin but they were suprisingly filling.

oh, the recipe i used is this one.

i ate them with some cooked pears, creme fresh and whipped cream.

well, i guess i'm gonna have to find something new to make next time.
pancakes! yay!
